BEER AND CHEESE PAIRING In hindsight, we definitely bit off more than we could chew, so to speak. But we were belligerent and determined to get this process right. And in the end, we did! We started making top-quality fior de latte for a number of restaurants in Port Elizabeth, which helped pay some brewery wages and other overheads. Some of the cheese even made its way to the 2021 Fools and Fans Festival in Greyton (lockdown edition) where it paired very well with our beers on offer. In fact, not only was it a tasty treat to complement the beers, but it was also a great talking point with our customers. Ultimately, it further showed us that the link between beer and cheese needs to be explored more. We tend to spend so much time debating cheese and wine pairings that perhaps we don’t consider how seductive the relationship between cheese and beer can be. Beers boast a wide array of flavours, flavours that can be very robust and can cut through the stronger cheeses. Think of a nice goat or sheep cheese paired with a Belgian golden strong ale or perhaps a spicey saison. Conversely, fior de latte is a very soft and delicate cheese so perhaps pair it with a light helles lager, wheat ale or a golden ale. There is a whole spectrum of beer and cheese combinations out there to be explored. We don’t make fior de latte at RHBC anymore since the lifting of the alcohol bans, and we gratefully find ourselves back to full beer production. However, we do have plans to bring cheese- making back at some point in the near future. So, keep an eye open for more RHBC cheesy goodness to come.
