Ferment ingredients 1 pkg - Lallemand (LalBrew) Verdant IPA Dry hop ingredients 50 g African Queen [15% AA] 50 g Southern Sublime [10.8% AA] 50 g Southern Tropic [17% AA] 12.5 g Southern Passion [8% AA] ................................................................................................. Brewer tips Mash in at 65°C for 80 minutes. Mash out at 75°C. This recipe uses mash hopping, but you can move this addition in at start of boil if you want to – just adjust the quantities to maintain the target IBUs. Ferment at 20°C for 14 days. My yeast choice is Verdant for hop expression but you can also use BRY-97 American West Coast Yeast from Lallemand. All dry hopping is on day seven but you can play around with the timing. Target between 6—6.5 % ABV - don't exceed 6.5% or the balance goes off with alcohol warmth. You can leave it hazy or fine with gelatine or your fining agent of choice. OT: What is your main homebrewing goal? GH: I like the challenge of repeatability. Often we get that one beer that is just brilliant, it may not even be particularly stylistically accurate it just hits all the right notes for us as a brewers. Being able to brew that as often as needed and have it taste the same – that is the challenge. I also enjoy refining the recipes, working out what makes it work. I have brewed the golden ale the most, and experimented with split batches, yeast comparison and so on, Experimentation is key to getting to understand how the various elements work.
