RECIPE: DAY SHIFT AMERICAN LIGHT LAGER Day Shift was the winner of the BASA-sponsored low alcohol category in the 2021 National Homebrew Champs. “This was the first time I intentionally tried to brew something under 3% ABV,” says Trevor. “When I found out about the low alcohol category I knew this beer could be adapted nicely to fit. Lots of batches and trial and error later, I ended up at 2.5% ABV. The biggest challenge was having a low ABV lager that still had some body and didn’t end up being thin and soda water-like as some light lagers I have had before can be. This led to a lot of experimentation with different lager yeasts until I eventually found one that didn’t over attenuate and still left behind some malty character in the beer.” ................................................................................................. Brewer tips Single-step infusion at 69°C for 60 minutes. Boil for 60 minutes. I ferment under pressure at 20 psi – 19°C for the first five days and then at 20°C for the next two days. If you don’t have a pressure capable vessel, you can ferment at 12°C for the first five days and then raise the temperature 1°C per day over the next five days, leaving at 17°C for the diacetyl rest. .................................................................................................
