METHOD Wrap each croquette in a strip of bacon (depending on how much or how little bacon you like per bite you can halve the bacon). Secure with a toothpick. Place on your braai grid and braai on medium to low heat. Do not try and cook these over hot flames as the potato will not be cooked on the inside. Turn every so often so that the bacon cooks evenly. Once the bacon starts changing colour, baste with Braaidsmaid Sticky Ribs marinade (I give it a good brush over on each turn). When the bacon is crispy and your pops are golden brown and sticky, remove from the grid and serve immediately. If you like a little kick to your breakfast, they pair well with a chipotle mayo. Serve with a breakfast weissbier, whose banana-like sweetness works well with salty bacon and with mild spice. INGREDIENTS 250ml flour 2 tbsp sugar 1 tsp baking powder ¼ tsp salt 250ml milk 2 large eggs 4 tbsp unsalted butter, melted Spray and Cook (for the waffle pan) METHOD In a large bowl, mix the dry ingredients together: flour, sugar, baking powder, and salt. Set aside. In a separate bowl, whisk milk and eggs together. Add the wet ingredients to the flour mixture, and whisk gently to combine. Don't overmix. Gently mix in the melted butter then let the batter rest for 30 minutes. Generously spray a waffle pan with Spray and Cook. Pour in a large dollop of batter in the centre of the waffle pan (not too much, so that it doesn’t ooze out). Place it on your braai, turning occasionally and check the colour of your waffle to determine when it is ready. Cooking time may vary, depending on your coal heat or if you’re cooking on gas. Serve with toppings of your choice and a glass of cold, frothy Belgian witbier. OVER THE FIRE WAFFLES WITH BELGIAN WITBIER Belgium is famous for a few foodstuffs, waffles perhaps chief among them. And if there’s one thing the country is even more famous for, it is beer. A fresh and fragrant witbier is perhaps the best breakfast beer of them all and it’s a fine friend for foods, pairing well with anything from smoked salmon and scrambled eggs to waffles served with fresh fruit. ontapmag.co.za | Summer 2021 | 47
