Until recently, nolo beers were considered a style in themselves, or at least, they were presented on the same level, for example, at tasting competitions. But with the trend rapidly expanding, it was never going to stay that way. A lot of low and no alcohol beer brewers, including some exclusive ones, have been developing full ranges of nolo beers, to meet the needs of demanding beer lovers. BREW ANY STYLE OF NO AND LOW ALCOHOLIC BEER With smart brewingmethods, it’s now possible to brew any kind of beer style, with limited alcohol. SafBrew™ LA-01 is in fact, perfectly adapted for brewingmultiple no and low alcohol beer styles, thanks to its inherent characteristics but also, it’s flexibility when one becomes a bit creative. As a POF+ yeast strain, SafBrew™ LA-01 can produce phe- nolic notes, which translate as spicy or clovy notes. This is highly suited to a lot of beer styles, especially some of the Belgian styles like Saison. But these phenols productions can also be counterbalanced by brewing techniques that limit the production of the phenolic precursors (i.e. ferulic acid): high temperaturemashing is an efficient brewing method that will produce a wort which will ultimately turn into a more neutral beer, with no notable spice. Another way to reduce the phenolic perception is to experiment with special malts, especially darker ones which naturally contain phenols that will drown the spicy perception, or which have less ferulic acid due to the high temperature roasting. Why not brewa no or lowalcohol stout or porter! And last but not least, wementioned earlier that SafBrew™ LA-01 works very well with a kettle souring process or creative dry hopping. Meaning you can also produce very clean and sophisticated sour beers, or more hoppy low alcohol ales: it’s amazingly versatile; knowing also that a kettle souring with SafSour™ LP 652 will hinder the production of phenolics. Whatever you want to brew, if you are looking at reduced alcohol or even non-alcoholic beer, SafBrew™ LA-01 yeast strain should be on your trial list. By adjusting brewing parameters, you can achieve both very easily. And when it comes to diversity, you can pretty much brew any style of low alcohol beer using SafBrew™ LA-01 .
