52 | Spring 2024 | ontapmag.co.za INGREDIENTS 2 Egg yolks 500ml Oil 2tsp English Mustard 1tbsp Paprika 2tbsp Sugar 1tbsp Salt Juice from half a lemon 125ml Vinegar Step 1 Mix the yolks, mustard, paprika, sugar, salt & lemon juice in a KitchenAid or similar. Step 2 Slowly add half the oil as you blend on top speed. Step 3 Add the vinegar. Step 4 Add the rest of the oil SLOWLY until you have a very thick mayonnaise. METHOD TASTE TEST The beer adds a slight hoppy, but pleasant bitterness to the potatoes, as well as a sweet aftertaste. The sweet and stickiness of the bacon along with the creaminess of the mayonnaise balances these flavours. The spring onions add a freshness and extra crunch to the salad. Since it’s almost Heritage Day, why not cook the chicken on the braai or Weber? THE MAYONNAISE INGREDIENTS 1kg Baby potatoes 1 Packet of bacon 1 tbsp White or brown sugar 1 Head of broccoli Jacob’s Pale Ale 2-3 stalks of Fresh Thyme Salt and Pepper Spring Onions to taste Step 1 Boil a bag of baby potatoes in Jacob's Pale Ale. Once cooked season with salt and pepper. (Check for excessive boil-over caused by the beer.) Step 2 Crisp bacon bits then add some sugar (1tbsp) and Jacob's Beer (50ml), add fresh thyme (2 stalks) and cook until the appearance turns gorgeously glossy. Step 3 Remove the bacon and cook the broccoli in the leftover juices. Add a dash of sugar, salt, and pepper. Allow the juices to cook away to add a beautiful colour to the broccoli in the process. Step 4 Once everything has cooled off, mix the potatoes and bacon in a bowl. Add about 5 tbsp of mayonnaise into the potatoes and bacon. Continue to mix well and add some spring onion for crunch. METHOD THE POTATO SALAD INGREDIENTS 2-3 tsp Thyme 2-3 tsp Paprika 1 tsp Salt 1 tsp Pepper 2-3 tsp Chicken Spice 2-3 tbsp Oil Half lemon inside chicken Jacob’s Pale Ale (1 bottle) 330ml Emptied beer can or a “beer can chicken holder”. 100ml beer in the oven pan Step 1 1. Prep the chicken 2. Stuff some fresh thyme under the skin. 3. Baste the chicken with a mixture of salt, paprika, pepper, chicken spice and oil. 4. Place half a lemon inside the chicken. Step 2 1. Add the beer and cook 2. Sit the chicken on top of a can filled with Jacob’s Pale Ale. (Alternatively fill a reusable “beer can chicken holder” with the beer and seat the chicken on top. 3. Pour some additional beer into the oven tray, as this will help steam the outside of the chicken. Roast at 180°C for an hour then at 160°C for 30 min. METHOD THE CHICKEN
