Secondary Fermentation Transfer the finished fermented beer onto 2 kg of fresh, frozen cherries (50/50 sweet/sour cherries) in a secondary fermenter, leaving the yeast and trub behind. Optional At packaging, you can add 5ml of cherry flavouring (Barco), which gives a touch of pleasant cherry aroma without the artificial flavour.
